Xseed has been doing a pretty good job with the Legend of Heroes series.

That being said, the Cold Steel series feels a lot weaker than the Sky series. Maybe it's just me.

They could've been lazy and just dropped him down the hole or cut to black or something instead. It's disappointing though, the emotional impact of the Japanese one is a lot more clear and intense.

I think it's a justified change for the rating, but it still sucks because it ruins the impact the original had.

There is no way the Japanese version would get a T-rating, if the ESRB even let it pass at all.
Even M-rated games are very shaky about letting you kill children because too many people are afraid of the backlash. The only one that even comes to mind is Deus Ex.

The international version is ridiculous and cartoony, compared to the original which is anything but. The presentation is what's key here, you can get away with a lot more if you present it in a less serious manner.
