Well, the devs didn't compose the tracks themselves, they just picked a bunch of already existing awesome tunes and put them in the game, apart from a few tunes they asked the musicians to compose for the game specifically.

this came to my mind at 1st choice, I gotta say thought that I generally don't like soundtrack music that much because it's either annoying, depressing or starts to repeat itself on some point you are stuck and start to hate it
also orchestral stuff I usually don't like expect if it has some nice hook/is epic enough like dance of the knights and stuff like souls games music sucks imo, makes the game more depressing
