If it's an RPG, you get dialogue to explain the story.
If it's an action game, you get to fight fun encounters.
If it's a difficult game, you get the satisfaction of progressing.

Entertaining and challenging boss fights have been the defining feature of MMO PVE for more than a decade at this point.

RPG boss encounters justify all the time spent on side quests and character progression, and in something like the Souls series are often the entire reason you play the game in the fucking first place.
