Stamina can be used to perform melee-styled air dodges/wave dash, blocking, rolling and other defensive and movement options.
You are essentially given the option to forgo the health of your shield in favor of higher mobility.

Also for a gimmick character, Mimikyu and his gimmick is that the first five hits he takes do nothing.
