My understanding is most knife fighting is a competition to see who dies first on the way to the hospital.
Otherwise your ambushing and making decisive incisions on your targets anatomy.

Because whatever you do, unless you can control the grapple and disarm them shortly thereafter, your going to get cut in some way or form.
