I need a game where I can explore around and mindlessly shoot stuff. Preferably it won't actually be too easy, nor too difficult or complex.
I just need something to keep myself busy while i'm on phone calls/listening to podcasts that I actually want to pay attention to. GTA V is a great example but i've already played the shit out of that game. Fallout 4 is interesting me.

Honestly the first half of Crysis and most of Warhead would suit most of this. The levels are all very open ended and there is stuff to find like hidden weapons and alternate paths. You have a few options for how to fight or approach anything with the nanosuit but you would pretty much kill or stealth past anyone you meet.
