Just start with Ziggy Stardust
Start with Ziggy, then Station to Station, then Low
All of his 70s records aside from Pin Ups are essential, also Scary Monsters from 1980
All of his records from Heathen onwards are great too, with The Next Day and Blackstar being fantastic. Blackstar is probably in my top 5 records by him.
Just start with the Berlin Trilogy
Hunky Dory, Ziggy Stardust and the self titled debut are good starts.
It really depends on what you want. If you like soul and disco type music then check out young americans. If you want something similiar to the sound Iggy Pop, and Lou reed had in their solo careers then check out heroes etc.
Station to Station and Hunky Dory are the only releases I'd call "essential". Young Americans is often overlooked, also
Look up his chronology and pick any album from Hunky Dory to Scary Monsters. They're all pretty good. Ziggy is his "classic rock" album and has always been his most popular, but Low and Heroes are the most beloved by the modern indie and "art rock" hipsters.

Oh come on I can't just choose EVERY 70s album.
Start with Hunky Dory and Ziggy Stardust - the most accessible Bowie albums.
Then, almost everything until Let's Dance it's essential.
But Low and Heroes are special for me. But if you are a pleb, probably you will prefer the first halfs of both albums. The second halfs are more instrumental/less accessible.
And I forgot Blackstar - is essential to.
