Nobou Uematsu's FFVI sound track is wonderfully creative.
He's a great musician in general though. Had a great band called The Black Mages. I love his score for Lost Odyssey.

Sometimes with music. Less can be more. Especially in Orchestral-style music. A lot of games have mostly forgettable bombastic orchestral tracks because the music gets lost in the gameplay and the sound design.
Its the same issue movies have too. Think of the most memorable movie music. Most of it is playing over the scene for a specific effect on the audience or in the movie intro/outro.
