Also, overall, increasing Chinese power over global trade threatens to upset the unipolar dominance of the US in securing global trade in the post-WW2 era. This isn't inherently a bad thing of course and I'm sure China has the same desires as the US did (secure global trade) but the fact is that if the US stops being the sole "guarantor of the seas" a la Bretton Woods, and other countries get in on it, it may become more unpredictable... or even regress into imperialist sort of trade, where each nation has to escort their own trade convoys and lock down their economy.

China is clearly posturing to protect its own trade interests, not only in the South China Sea but in other tense theaters like the Persian Gulf and East Africa. Clearly China is aiming to either gain greater autonomy within a world where the US Navy rules the waves, or to establish itself as a competitor with the US Navy. For allies of the US and those that depend on the US to protect global trade dealing with their country, that is a big deal. Of course for countries that are alright dealing with either side, or countries that prefer China, it's not so much of a concern.

The retaliation that'd really be feared would have nothing to do with ICBMs at all. The ruined global economy and spike in prices would cause starvation and riots and plunge the world into a depression. Even assuming China just decides not to launch missiles back - which they definitely could - it would still be an unmitigated disaster for everyone involved.
There's a reason it's called mutually-assured destruction. "Just nuke it" is never a good solution for anyone involved, unless you're already in a nuclear war.
