Parishes run Intro-to-Catholicism classes called RCIA (Rite of Catholic Initiation for Adults). Basically it's weekly classes that run through each part of Catholicism and let you ask as much as you want. It ends in baptism but you're already baptized, likely, so you're good. Just attend class.

My parish also has little laminated placards with all of the responses for the prayers too, I can't say its the same in Canada but every diocese I've been to in America has them.

I have a great respect for the Catholic church. I grew up Lutheran until I thought I was all intelligent and went atheist at like 14. I'm 21 now, I go to an evangelical uni, and I want to rejoin the church but Protestantism is clearly showing itself these days with the gay/female pastors, and generally quite laissez faire, selective, biblical interpretation.

Tell me though, why should I subject to the authority of the Vatican? Orthodoxy is looking quite attractive the more I research.

Sure, when I was a teenager. But the more you pay attention to the inner workings of the Church, and understand who's who and who believes what; the more you keep up with the press statements, encyclicals, and exhortations; the more you listen to and read the statements of important Church members and begin understand the sheer multitude of thought that the Church produces; the more you realise just how untenable the idea of a subverted Church is. There's is absolutely nothing about Church doctrine that has changed since Francis took office. Nothing. And of course it hasn't changed: it can't. No one has the power to change it.

This talk of conspiracy is nothing more than accusatory speculation that tries to explain too much by saying too little. It's just isn't that simple, despite how convenient it is to think so. The reality is that the Church is a massive institution, with a long and storied history, consisting of both a huge hierarchy and following, which involves itself in a wide array of activities throughout the world, and is the custodians of a very complex theology that has been refined and clarified for thousands of years.
