Because their religion depends solely if the bible is some infalible book with no errors and Evolution and pretty much all of modern science contradicts the bible in terms of history.
There is no scientific evidence for Adam and Eve, the Jewish exodus from Egypt, Noah's flood (i mean the bible account), Even Jesus is debatable to whether or not he existed.
They believe if their kids get taught science in school they will see them reject their religion and therefore burning in hell becoming evil Atheists.

And speaking specifically about human evolution, the whole house of cards collapsed completely at the moment genetics revealed that Neanderthals were just normal humans who interbred with other human races. Dogs are one of the biggest disproofs of evolution there is. They can "evolve" various phenotypes when their breeding is controlled by superior intelligence.
