I know for Canada and Australia there are actually jobs for lawyers which is what I originally studied for.
I also know jobs like pharmacist are easier to get in other countries but in ours it's like you need to be Einstein to do it.
So i'm guessing if it's easier to get those jobs, there's probably many other easier to get ones.

Get your parents to get citizenship first is the best bet, otherwise keep contacting them with 'evidence' of your Italianness. Learn the language, keep complaining about how you feel ostracised and bullied for being 'too italian', and how you long to return to the homeland, find an italian wife, have a horde of children and 'find a career' in one of Italy's main industries (food, tourism, history etc.).
Other than the parents thing, it's really about luck, you gotta get the 'oh just give it to him so he fucks off already' response.
