Didn't use a sous vide, I should have hit the side a bit on the heat. It's a learning process, but it was still delicious.

I'm not a fan of well-done steaks, but this other extreme is worse. I like steak in between Medium and Medium-rare but with this blue bullshit I'd rather eat well-done than this any day of the week.

You're using too high a temperature then. Slow cook over low-medium.

try velveting your meat then for beef. Genearlly only works with smaller bits of meat, but it is what the chinese do for their stir fry beef. You usually dip the meat in an oil/cornstarch/vinegar solution and let it marinade in that before cooking.

You can cook it all the way through but it still stays tender.
