and, despite the moon having only 1/3 of earth's gravity, and a lack of atmosphere... you can't just jump back into space. They still need to construct some serious rocket platform to propel them off of that rock.

They did use a platform. The tape was created to be radiation resistant. The pressure of the moon is much less than earth allowing for prolonged range of motion. With no acting resistance other than the small gravity, their launch platform was easily enough to boost through.

The camera mounted on the moon rover was capable of being remotely controlled. They parked it to catch view of the ascent stage taking off. They didn't bring the rover until Apollo 15, so there's no external footage of the ascent stage liftoff from 11, 12, and 14.

Because there is a signal delay from the Earth to the moon, they had to pre-program the pan/tilt commands and send them ahead of time.
It took a couple tries to get the timing right, which is why the ascent footage from Apollo 15 and 16 is not as good as the footage from Apollo 17.
