Stars are so fucking far away it's really hard to appreciate. In the past couple of thousand years there has been a small amount of shift in the constellations but nothing that would be noticeable to the naked eye. More sensitive equipment can actually pick up parallax changes by comparing the changes in the position of 'nearby' stars against the more distant background on each side of our orbit every 6 months, it's how we can reliably measure the distance to objects in our stellar neighbourhood. Bear in mind though that the instruments have to be extremely sensitive and the changes are REALLY fucking small. It's like measuring the distance to Beijing by taking 2 pictures 500 meters apart, it's actually remarkable.
