The amount of lard used to cook was tiny compared to the fat from corn and butter used today in processing food.

Last I checked, in my biochemistry class at uni, we learned insulin production happens in beta cells in the pancreas. Insulin production increases if blood sugar increases. That is a normal reaction. The beta cells are never "overworked" from too much blood sugar. The problem is if those cells are "clocked up" by fat.
