Its not that they didn't realize it got cold in Russia during the winter, it was more they realized their best chance was then and to delay any longer would have them facing a re-armed and modernized Russian military. If they failed to achieve victory by winter then it was already a lost cause. The biggest failing came from the weather at the start of the year rather than at the end. The spring Rasputitsa of 1941 was one of the worst and longest-lasting in decades.
