The goal before that was to represent them symbolically first. For example, white skin was shorthand for female. In Egyptian and all the art they inspired (like early Greek), women were always white and men were always darker. Obviously not true, but that's how they drew it.
Egyptians also drew children as miniature adults. Were Egyptians giving birth to more advanced babies? No, of course not. It was the symbol that was important.
For the blue eyes, it wasn't about saying "This guy had actually blue eyes", it was about putting very valuable stone (lapis lazuli) in a prominent place. They also used lapis lazuli as pubic hair, but that doesn't mean your ancient ubermenschen had shiny blue pubes.
