It is true that Jaque de Molay was trying to organize another crusade but to say that the fall of the Knights Templar was what caused muslim victories is inane. What really caused the subsequent muslim conquests was the reluctance to start a new crusade like he and the mongols proposed not the fall of the order per se.

The primary thing that stopped the Ottoman empire was simply stagnation and decline, although if you want a named person John III Sobieski works, him breaking the siege of Vienna helped lead to the rapid collapse of the Ottoman Empire during the great Turkish War. The Ottomans lost massive amounts of land during the war and it was essentially the beginning of the slow decline of the Ottoman Empire.
