It's actually a little bit of both. Having raised chickens, those who are of a breed meant to be slaughtered for meat will reach a larger size than other chickens. That's pure genetics at work. On the other hand, chickens have the ability to overeat (just like any other animal) and also can be affected by the kinds of food they eat. So they may become fat from overeating, or from eating specific foods designed to gain mass. Basically, its a little of both.

To answer this question. Chickens can live 10+ years provided they are kept free of sickness and protected from natural predators. An egg takes is laid every 25 hours, and takes 21 days to incubate. A chicken begins laying around 4-8 months depending on the breed. Just some info, compare that to a human who needs 9 months to "incubate", and around 14 years to begin laying....

Being honest, this is probably not a good idea. When you select heavily for certain characteristics, you end up losing pretty much EVERYTHING else that's non-essential and you often bring along unintended traits that might be negative.
This is fine for chickens, since they only serve one purpose: food production. We can't quite as simply summarize the purpose of a human though. For that one reason, it might be wiser maintain a little genetic variability in the population, just in case you need it later.
