As far as I can tell the biggest difference between Shounen and Seinen is that the latter uses a lot more complicated Kanji that adults are more familliar with than teenagers.

Well no, but I'd say it's above average. The characters are shallow but still likable, the unique European aesthetic and the running themes of coffee and rabbits are very comforting and adds a great deal to the atmosphere, the fanservice is rather gratuitous yet strangely refined and classy in a way, and the studio that handled the anime did an outstanding job. A solid 7/10 in my book.

People get way too involved in the shounen/seinen bullshit.
If it's run in a magazine or airs on daytime TV, the publisher needs to know what kind of ads to put alongside it and if it needs furigana. Outside of that, no one really cares. Kids watch kodomo and daytime shows, adults watch porn, and otaku of all ages watch everything else.
"Military otaku", "women who like athletic men doing athletic things", "mecha fans who buy models" etc. are far more meaningful demographics, and they span all ages.

Before Harry Potter sold more copies than the Bible, the idea of writing books explicitly for teenagers was a niche concept. Now everyone and their brother is writing "Young Adult" fiction, and people have this silly concept that some chinese cartoons are canonically more mature than others.
