I would argue that without Juha, Uryuu's role is even less important. Perhaps replace him with some kind of evil hidden Quincy who doesn't have 26 fanatics, future choosing powers, or a convoluted Soul King connection never revealed. It could be a minor arc, but one that gives purpose to Uryuu and the potential drama about him having to choose between comrade Ichigo and Quincy responsibility. In fact, that's probably how Kubo was gonna do things in the first place.

Honestly from Hueco Mundo and onwards just cut at least half of the fights and perhaps the characters as well. Bleach has many flaws but the biggest one, in my mind, is fights after fights between characters I don't care about. I don't give a shit about Espada underling #39475 or Sternritter #93847 who just turned up to fight until they obviously lose.
Bleach is a battle shounen where the build up arcs are far better than the actual battles.

A chapter ending with Aizen showing up as a teacher for Ichigo's class would've been great and would have fed AiIchi faggots like me for a decade.

Add more backgrounds, shorten Mexico arc, fully remake Karakura town fight arc, erase half of characters due them being unnecessary, make Ichigo not to lose his powers after Aizen's arc so fullbring arc will never happen or to put fullbring arc somewhere between SS and Mexico arc so it would make more sense. Making last arc involving other mythologies like greek, egyptian, norse etc., quincies are still main assholes but they are spread worldwide and extinct/very few only in Japan and make them actually relate to Christians. They are several soul societies, several soul kings and all world is mended by them - Yhwach wishes to usurp all existance. Nerf Yhwach, making him actually interesting character with some sort of unique ability instead of simply bullshitting on evertyhing. Old gods are dead and replaced by young ones in every mythology, the same like with shinigami.

In basis, Bleach is good, from the way I see it it's just suffering from Kubo having writer's block from time to time, so all it needs really is someone who has firm grasp of plot and knows where to take it.
Other stuff I'd personally change:

Kubo's pacing was shit instead. Seriously, after a killer first 20 chapters and then the Everything But The Rain awesome 10 chapters, there were 170 chapters in which almost nothing happened, battles dragging for too fucking long (though Mayuri's hax was cool) and lots of useless stuff.
Bleach wasn't rushed, last arc had 200 fucking chapters in which nearly 150 were literally nothing. At the pace of the first 20 chapters or even the 10 mini arc chapter, everything in this arc would've been resolved in at most 90~100 chapters, and the other 100 could've gone sparsed to resolve all the fucking mysteries and dropped plot lines.
Heck even plot lines that started in this same arc went unresolved. And there was also too much useless stuff. Like a dozen chapters for the captains to open the gate to Royal Palace (but oh no, we don't have energy for that. Oh but the SR can help us. Uh they are still not enough, lets use Aizen! Uh, Aizen is knocked down). Or all those chapters stalling Toofsy and Shunsui in a fucking barrier. And the whole Bankai stealing (with all those chapters with fights using shikai "creatively" for nothing).
And like that this arc is full of extense useless stuff and shitty pace that didn't add anything to the story.

fuck Ywach, he's not a crucial part of the series at all and was very clearly only thought up after Aizen was dead and Kubo needed another antagonist.
So I just leave the manga as it is, but end it with Aizen's defeat. It will be remembered as a great manga that got silly in its final arc, but the resolution will be decent enough that people will think of it fondly.
