None. I like JoJo the way it is. I like some parts more or less than others but I've more or less liked every part.
Why would you delete any? It's a good manga that manages to get better as it goes along even after 30 years and none of it is actually bad, let alone bad enough to be better off without.
I generally have liked every part of Jojo but I really am not liking part 8 at all and think it's starting to go from silly and over the top to just straight up dumb.
Where are you up to? It's meant to be a mystery story so we won't know 100% what's going on until near the end. And it hasn't been overly silly, everything with the Rock Humans has been really intense and well done, 8 has probably the best balance between the comedy and seriousness in the series.

If I had to pick one I disliked part five the most
Even still I liked a lot of the characters and enjoyed the part just not as much as any of the others
I like the mystery aspects and the atmosphere but the main character himself is who I'm not a fan of. I find Josuke incredibly boring as a character and find his backstory generally pretty dumb.
I wouldn't erase it or anything I just like it less than the other parts.
I really don't like part 5, I might considering actually erasing it from existence.
Part 5. It's literally just filler.
What happens if I erased Stardust Crusaders? Would Josuke even have a Stand or would he have the Ripple?
This also means I erased everything else in the timeline since one of the events in Stardust Crusaders is Dio coming back and it's because of Dio that we have all the shit in 4, 5, and 6.
