We have only seen the dungeons we recruit our team members in so far and i doubt thats all of them, Castle we get ours, morrigana, Ryuiji and then Ann from the boss, next is Yusuke in the art gallery, futuba in the pyrimid and finally Makoto early in the vault/space station and Haru half way through. We still havnt seen anything of Goro but we know he is a party member that is apparently dressed like a plague doctor so everything we have seen happens before the flash back in the tutorial

Yes, they realized randomly generated fail to capture the feel of a dungeon and due to how the dungeons are based on the boss they made every dungeon unique instead of RNG so they could do more with puzzles and make use of the new platforming and stealth mechanics. Honestly the platforming seems bare bones as fuck along with the stealth but if it means not having the awkward designs that got RNG'd in persona 4 Im in
