Could honestly forgive the aesthetics of this guy's movies as just not appealing to me personally, but the stories are always so mediocre and boring that there's just no way for me to get engaged. So in the start of the movie the first time we see Mitsuha waking up and grabbing her own tits in confusion, that is Taki in her body right? He even says "Mitsuha?" When asking about himself as if he didn't know who that was.
Right? But then like 2 seconds later when Mitsuha is getting rice with the family, it actually is Mitsuha.
I'm assuming we skipped a whole day in the scene where we first see Mitsuha waking up, and the scene where she is watching the news with her grandma.
Right? If so, I feel like they could have made the transition better. I was kinda thrown off about who was who and when for the first like 10 minutes.

Why did Taki wank around during Kataware Doki and end up lacking the time to write their names/details of the events?

This was the biggest plot hole for me. Are you telling me they didn't check their cell phone dates or looked at the calendar ever? I know they have the hazy dream explanation ready but still, they seem to remember enough details such as names of the other person's friends that dates shouldn't be a hard thing to remember.

Taki was the same age as her when he bodyswapped into her 3 years ago. So she is 3 years older.

3 years is hardly a difference. In fact, Mitsuha's probably around the same age as Okudera.

We know that Mitsuha's grandma went through similar experiences and that the Miyamizu family has a history of experiencing the phenomenon, but there's no evidence to suggest that Mitsuha's parents went through this.

Mitsuha's dad just knew something was off since Taki and Mitsuha's personalities are completely different.

KEY miracle is an industry standard.

They were too hung up over the fact that they were intermittently switching bodies to notice. Plus they forget certain details when they switch back since time is correcting itself.

It's not like they were expecting it to last so quickly. And they were just so happy to finally see each other.

Shinkai was intentionally trying to throw off the audience and gradually figure out what was happening.

If it showed you right off the bat what was happening, it would've lessened the impact.

It's a lot easier to figure out the sequence of events the second time you watch it.

It's one of those movies where you notice more things the more times you watch it.

It's just a clever use of editing and cuts to make the intro scene have an air of mystery to it. Scenes like that are meant to draw you in, engage you and have you asking questions from the get-go, It would be really boring if they just did the standard dialogue dump or explained everything away.
