I don't think Pokémon is any good considering all Pokémon names and their moves are made-up pun names. Only few of those games have Kanji also, and because of most of us were/are used to play those games (i.e. quickly advancing through the game), it'd end up being too slow and frustrating to read all the dumb shits trainers have to say before you get to battle them.

Ghost stories are surpisingly good for practicing beginner to intermediate tier listening comprehension. They're read in a pretty slow fashion. with a lot of. pauses. so they're really easy to follow. Search on youtube for 怪談朗読 and give it a try

I'm in the hundreds for cards studied in my first week of Anki. It's just my retention being shit I think but is there a way to alleviate this other than reducing the amount studied per day?

cram sessions, there is no magic way to reduce it, gotta study.
If it's too much for you then reducing new cards to 15 should be ok. There is no real benefit to biting more than you can swallow.

If you're just mad about all the irregular Kanji readings your first couple of thousand words, you should realize that things get more regular and predictable the more your vocabulary grows. A good chunk of the language consists of straightforward onyomi+onyomi content words that double as verbs if you stick on suru.
