Anime taught me how to cut cabbage. I never thought of cutting in thin slices before I saw it in anime, before that I'd take the leaves and then try to rip them apart into small enough pieces or cut them individually which made them still too big. It's much easier to cook when you do it like they do it in anime.

Most online recipes seem to be "flour, water, egg, cabbage", is that really it? Should the cabbage me maximized and the other ingredients minimized? Do you just add the leftovers to the mix of cabbage and glue or do you do it more like a pizza with the leftovers on top

I did that in skyrim.

It's been a while since I've had okonomiyaki, but the flour, water, and egg are mixed to form a "binder" for the cabbage. You just mix the four base ingredients, and whatever you have in handy (I ate it with shrimp and other seafood). You don't need to think too hard about it, just spoon an equal amount of batter per pancake to your pan and fry it. It's topped with bonito flakes, okonomiyaki sauce, japanese mayo (kelpie), maybe some furikake.
As for the sauce, it's like BBQ sauce but tangier. Apparently, a good substitute is mixing worcestershire sauce, ketchup, sugar, and soy sauce. Emphasis on the worcestershire, because that's the main flavour of the sauce.

That's why you cook them not eat them raw.
