What's the appeal of this show? Why do people like it?
It's the most insufferable slice of nothing happens ever imaginable. None of the characters are likable or interesting, none of their problems matter in the slightest, and literally nothing in the show amounts to anything.

Dysfunctional teenagers in a high school drama is intriguing. I used to really dislike it because I thought Yui and Yukino were enormous cunts, but then I gave it another shot around season 2 and liked it.

The "autistic MC fucking up the flow of the standard high school anime story" parts were enjoyable, the teen romance/musing about what love means shit was not. As the series progressed it became more about the latter than it did the former, that's all.

I love how whenever an anime comes out with characters that have realistic conflicts it divides the viewerbase into people who love it and people who vehemently hate it.
I bet you went into this expecting typical haremshit despite the title warning you otherwise. It's a subversion of high school/harem anime where the protagonist is willingly misogynistic and asocial instead of just being annoyed and shrugging off the attention he gets. The high schoolers bitch because they act like real high schoolers.
8man acts "edgy" because he's a social reject who doesn't fit into any cliques and only ends up with friends because he's forced together with Yukino since they have similar problems. Their dynamic of going out of the way to solve problems and trying to outperform each other is interesting because it provides actual character development. The story comes from the character interactions and drama.

Oregairu is a harem anime for people who liked harems but after having seen a few are bored by the repetitive formularic nature of them and because of said nature find them very transparent and hard to buy into and enjoy in a serious and perverse manner, rather than treating it like silly softporn as they would a standard harem.
Oregairu allows them to enjoy harem again by having a refreshing protagonist that goes against the very specific expectations for an MC set by other harem anime, having characters "bitch about shit" and act slightly more realistic(which is a lot compared to the harems it "subverts"), having the main character give "deep" monologues and yukinoshita giving off this feeling that shes got more on her mind than presented at face value. Things like this all give the viewer the thought that "im watching more than JUST another harem" "this is deep" and a soundtrack that supports this idea by making the show sound more serious and emotional(wish I could credit the soundtrack more but I suck at analyzing/describing them).
The fact that nothing happens is of course not the exciting part, but the fact that something might happen. After 2 seasons you might think that has gotten old but since MC was established as being rejecting of the girls and anti-social and the girls never were straight forward about any romantic interests even minor steps can count as "something happening", maintaining the possibility of progress and therefore allowing the teasing and excitement to continue.
Of course there's also the standard enjoyments of a harem even if subtler than normal, I wont go into those.
Some people will also mention how there is a bit of theme exploration in the show, something about people being fake and putting up fronts, which is definitely there but I think the main thing that carries the show is being a harem for those who got sick of a harem.
