You do realize that the Bible doesn't begin with Jews right? Abraham, the first Jew basically, lived around 2000 BC, while Noah was born 1000 years before that. And then Adam 1500 years before Noah.
That means that God likely had a bunch of covenants with people but those people obviously didn't listen since Noah was the only guy to survive. The Jews are only about 2000 years of Biblical history, and their covenant ended with Jesus.
