You could even do a thing where the son is a Deuteroganist as he tries to cope with the fact that his mother is gone and turn it into part isekai/part Slice of Life or something.

I want an isekai where the MC is an engineering student returning home from buying his limited edition Holo figurine, so he decides to focus on bringing the industrial revolution a few hundred years earlier.

The show is full of flashbacks to the mom´s life with her child. It is what gives her strength to fight and thrive in the fantasy world, and what makes her care after those who are poor and downtrodden.

When she comes back, her son is a young man who was inspired by her mom´s self-sacrifice to become the CEO of a successful company. The two have a tearful reunion and the "family" the mom created in the other world start telling the son their amazing stories of being beaten down, then found and given new strength and purpose by his mom.

The guy goes insane thinking that she's some random woman trying to fuck with his head so he repeatedly tries to kill her.

Reverse isekai? I wrote one of those before:

A female knight sacrifices herself to slay the demon king and at last bring peace to her land.

She wakes up in the middle of an anime convention, and is immediately swarmed by tons of people admiring her "cosplay". Confused by the sudden turn of events, the strangely dressed people, and the huge slabs of glass and concrete all over the horizon, she is quickly hurried away by some guy.

The guy is (let's call him 2D-kun), a student who is moments away from NEETdom, whose biggest wish is to be transported to a new world. He was there when the knight appeared, and knowing all the tropes, he quickly figured out what happened. As he talked about the world the Knight is now in, he was expecting her to quickly start looking for a way back (and perhaps take him as well), but instead she is delighted to be in a land where peace is the status quo, food is abundant, and suffering is pretty much non-existent, compared to her old life.

The Knight sets out to become a part of this new world, and starts a journey to become an office lady. Along the way she meets many other interesting people, including:

She falls in love with the son, and the mom MC has to deal with conflicting emotions of wanting to protect her son (and the world) from her evil, and wanting her son to marry and produce grandchildren.
Son is not harem protag trope BTW, he's disinterested with the reincarnated demon queen at best if not outright antagonistic. But he is on the route to becoming a foreveralone salaryman, and thus his mom's dilemma.

Turn it around.

The son is smitten with the Demon Queen, and mom is trying to get him together with one of the girls from the fantasy world that came back with her. One by one, they each try to seduce or get along with the booooyyya, while the Demon Queen and him start going out and Queen goes dere-dere over him.

Eventually, after all the girls she convinced to try and get on with her son have a serious, heart-to-heart talk with her, she gives up. It is a happy end, though, because the son gets the Demon Queen to renounce her evil ways.

So are we going from isekai to rom-com? Because seeing an evil demon lord trying to seduce a NEET sounds like the most hilarious shit ever.

That was kind of my thinking.
Demon Queen wants NEET, but NEET doesn't want 3DPD.
Mom is warrior who defeated and continues to oppose Demon Queen, but she desperately wants son to get married and produce grandchildren and all the fantasy-world girls she's tried to introduce to him are repulsed by his NEET-ness.
I think the shit would be hilarious and not conform to the standard harem and isekai tropes.
