From my experience after 2 weeks an episode doesn't get much more downloads compared to previous episodes. The rates tend to be consistent, the scissor doesn't seem to close.
Also, most who lag behind tend to catch up within a week.
But remember I only do this since last monday. I have no knowledge about what happens after a show finishes. But I assume batch downloads.

And even then the same anime can be profitable for one members of production committee and lose money for others. For example Actas lost money while making extremely successful Girl und Panzer movie.
You should think about sales only in terms "probably good", "probably fine" and "probably bad". Below 3k is still "probably bad", but it doesn't mean anime won't get 2nd season.
