then i stumbled upon this ost(phase 2) and decided to watch the 1st episode. This is the best sports anime and one of the best shows ive ever watched, i cant stress this enough.

Pretty much. It it went to someone like Madhouse it could have been a masterpiece, but as it is it looks terrible and I'd rather read the novel (with the novel (with the OST playing).

I actually just listed my top 5, rating is just placeholder. If I were to honestly give it to one show, it'd probably be Mushishi. Ping Pong is too structured and artificial, SSY has flaws you mentioned and others as well, Rakugo's ending left me conflicted. I guess Mushishi is the safest and best choice. Though I could give it, I'd probably give it to The Wind Rises.

I dont understand the frequency of Tatami Galaxy.
It's just weird anime to me, it doesnt have pleasant story stucture since every episode you reset. Voice acting is good but the lines are spoken too quickly to fully follow it. Animation is good but not amazing etc.

The limited series with large casts always have a set structure/formula in most cases. Their pacing has to be really even or tight and you can tell why writers/directors put the things there before it even finishes. In a loose structure themes and plot can easily take back stage so that we could spend time with the world or characters, which gives it authenticity and less of feeling that it was structured on a boards and is just clearing things off of checklist. See for example Madoka and compare it to something like Evangelion.
I know if it's not tightly structured it can easily loose sense of pacing but I'd rather have that.
