Blame "Tale of Genji," which is required riding in Japan and considered by most people in Japan to be one of the greatest works of literature. (To be fair, it is one of the greatest novels never written.)

"Sheep" and "anime" are NOT uncountable nouns, otherwise you couldn't say "one sheep/anime is better than another". (Check how the sentence sounds weird with true uncountable nouns like corn, bread, water...)

What you can argue is that "anime" has a countable noun with an irregular noun like "sheep". However, unlike "sheep", "anime" did not suffer any phonological shift that rendered its plural identical to the singular (skepą, skepō > scheap, scheap > sheep, sheep). It is a recently borrowed word.

However, here's the catch: as soon as a root enters the vocabulary of a language, it obeys the grammar and structure of the target language. Outside exceptions like sheep and oxen, English does plural by either umlaut (not applicable in this case) or adding -s. So it is perfectly acceptable the root "anime" gets the plural mark -s and becomes "animes", much like it is fairly normal a Japanese speaker say "shi animation" instead of "shi animations".
