Who is this Saber and why does she have this huge rack? Why do they keep remaking Arturia? I don't understand.

She's popular. She's an alternate version of Saber that used the lance Rhongomyniad as her main weapon instead of Excalibur, so she aged normally.

Well, imagine Bedivere didn't not throw Excalibur into the lake and therefore Arthur didn't die.
And snce she no longer had the sword and the spear didn't stop aging, she grew up 10+ years.

After those years, Lancer accepted divinity of the spear and became a divine spirit of the spear of sorts, while Alter refused the divinity to remain human, becoming the leader of the Wild Hunt.

There are three versions of adult Artoria.

One is human (alter) who has the same background as the one user said, but the difference is that she refused to become a heroic spirit and passed as human becoming the leader of the Wild Hunt. She's known as the Storm King.

The one user said. Excalibur is around, it's just not her preferred weapon. She became a Divine Spirit.

And pic related, the Lion King, who instead of being a titjoke waifubait character for gacha summon is an actual story archer. She has the same background as regular Artoria, but Bedivere failed to return Excalibur to the Lady of the Lake. In his third act of disobedience, he found his king gone from the world. Artoria was taken by her spear and changed her nature to a goddess (Goddess Rhon) who aged because she remained in the world. She lost her human feelings and some of her memories. At the climax of Camelot, she's given back her sword and gains her feelings. She decides to spend her last moments before the singularity is erased with the agonizing Agravain (who dies in her arms).

Bedivere ran away with it. And many years later Merlin took him into Avalon.

Nah, everything is the same. Those ten years changed nothing in the grand scheme.

Regular Lancer Artoria died, the one that you summon. Lion King is the one that stayed alive and became a goddess.
