So first of all, half those quotes aren't real. Google them quick and you'll find no sources other than ones linking that image.
Secondly, any labelled "San Hedrin" is not from the Talmud. It's from a court. Most of those are taken out of context and are part of witness or defense interrogation. Not codified laws as that image attempts to pass them off as.

Rabbinic Judiasm wasn't 700 BCE... that was still in the phase of the first temple. That wasn't destroyed until roughly 567 BCE by Babylon. The second temple was destroyed in 70 CE by Rome during the Bar Kochva rebellion and only after then did Rabbinic Judaism exist in it's most rudimentary phase. So either you're incorrectly interpreting something or the source is garbage. I'm sorry, man.

Regardless, if I'm wrong, the destruction date of the temple remains the same and your initial claim is wildly inaccurate. Apologies for the Bar Kochva date if there's newer data out there.

The merchant will let you taste it first. Then say you want to buy it, but produce the damaged coin. He will not sell to you, so you can then move down to the next one and pull the same trick.
The Talmud is a holy book of sorts. Is it not? How can it recommend cheating this way?

The Talmud is a legal commentary book. What it would be is a massive discussion of Rabbis arguing if that is stealing or lying or coveting, etc. It's not considered a holy text.
