They didn't put time or effort into crafting well choreographed or executed fight scenes like they do in ghoul.

The first part is actually quite a good read but the sequel starts underwhelming, slowly gets better and then takes a nosedive halfway through.

The premise of Tokyo Ghoul is semi related to the premise of Evangelion. The main character has to learn to stop being a pussy because the idea of noble suffering is a fucking lie. "Noble" suffering is merely enabling the shorty people around you, and you have to wise up to the way of the world if you want to keep the people you care about safe. At the same time one can draw the line at being a complete monster, striking a balance is important.

If one is an actual edge lord or to NEET to comprehend the above point then both the anime and the manga are effectively incomprehensible.

IIRC the only time Kirito ever showed anger was at the end of the Alfheim arc when the worst villain ever written was literally raping his waifu infront of him. 99% of the time Kirito is supposed to be a cool, calm, and collected badass, but bad writing just makes him completely bland, inconsistent, and uninteresting.
Kaneki isn't angry at all either. He goes through some arguably edgy phases, but never anger or rage. Even his edgiest point is during the first section of the manga before he gets tortured, because he has a boner for tragedies and is a fucking loser thrust into a suffering-filled world. Then he develops and begin taking a very active role in trying to change the broken society he lives in through way of force, and ultimately where the manga is now, he is just seeking as wide a viewpoint as possible to truly understand this world before trying to properly "fix" it, he has tons of friends and allies, and hasn't really hated any of his enemies. It's been a LONG time since he was edgy, and even longer since he was remotely close to "angry".
I can understand the misconception if you're an anime-only, though.
Eren's the angriest one you listed but even then the fans overplay his anger a lot because "kill all titans" is his primary stated objective, but considering that the vast, vast majority of characters he interacts with are not titans, it's not like he goes around screaming at people. And the few people who ended up being titans and ruining his life had already built up relationships with him before the reveals, so his encounters with them are very much a mix of anguish and their "betrayals", while he strengthens his convictions and resolves to defeat them anyway.

Kirito's the only self-insert here, unless you count "oh man I wish I was in their position, here's what I'd do in the circumstances instead" as self-inserting, which it's not.

Much better, the first season covers the most boring and uninteresting part of the manga, which just involves Kaneki adjusting to ghoul life and learning about the world. The second season completely butchers literally everything from the manga that it can and if anyone has watched it before reading the manga, I can only give my strongest recommendations to forget everything you saw.
So if you found anything interesting about the story in season 1, try out the manga.
