He probably works backwards from the basic premise of "if you're trying to get through my castle, you need to die horribly because of reasons" and then figures it out from there.

Well what happened there was he got his shit wrecked so bad that a chick he was scoping out told him to fuck off because of his newly acquired ultra harelip and it was the bowmen that finished the knight off. Later he was still so pissed about it that he beat the cute girl's face into mush while her brother watched and Wolfram had such a rip-roarin' good time watching it all happen that he gave the guy his old job back. Then later he shows off that he may be a dick but he sure as hell isn't a pussy when he beat one of the hardest badasses in the rebel army and took on like seven guys at once while his boss runs and hides in a chimney. They only managed to kill him when they mobbed the fuck out of him and literally ripped him limb from limb and tastefully set up his severed head as a decoration.
Though all in all, if I had to choose I would definitely take that over a slow and painful ass-staking.

No, normal travellers easily passed the castle. All our protagonists were rebels, that's why it seems like he murdered everyone. He was "I have to defend the borders and kill every rebel trying to get through my castle." He was a good man.

He did no killing or torturing without reason. Everyone he killed and tortured were spies and soldiers of an enemy trying to attack his home. Are soldiers killing the enemy soldiers in a war evil too?

I never said he was evil or even that he was wirthout reason, just that he was scum and had zero characterisation, both of which are true. Being scum can be justified but that's neither here nor there, he was a shallow character whose sole purpose was to provide torture porn and give the reader someone to hate in the laziest way possible. That's about it, really. He just isn't interesting as a character and there are far more worthwhile villains out there.
