People don't realize the food of the restaurant is just one criteria for the stars. The atmosphere and setting and other variables are also factors. Liek the food can taste awesome but if it's presented like how grandma presents it then it lowers the grade.

It's about 3* Michelin gastronomy.
That means you need a 10/10 wine cellar, totally fresh A+++ grade ingredients from all over the world, world class service personal, gold cutlery, wine glasses that cost 130€ per glass, world class restaurant chef/service personal/Sommelier and absolute top of the line chef with a world class kitchen brigade....

If that is given, you need to make fucked up menues where you do some french fusion cuisine preferable in a way nobody even knows what it's supposed to be and keep that going for 1-2 years...

Guess what, those restaurants are a meat grinder for the personal and won't make a lot of profits (most end up on a +/- 0 ROI) as all the money that comes in has to be thrown straight back at it to keep the standards up.

So most of them are either 20 seat prestige projects by some narcistic chef or they belong to a 5 star superior hotel where they don't give a single fuck about the profitability.

Last but not least why aren't there that much in Italy or Spain? Simple, you don't find enough people that are willing to pay 390€ for a 8 course degustation menue + 190€ for the wine pairings...

Fwiw I don't think any American is a fan of the tipping system, but anyone working in service will tell you that what they make in tips is way more than what they would make with minimum wage. The people who work as waiters and waitresses tend to work these jobs because of the added incentive of making bank on tips. It's not like they're forced to work these jobs

I went to a Michelin star restaurant in Dresden and it was really good. My german wasn't good enough to understand exactly what I was getting but it reminded me of something I could get in a Michelin start restaurant in the USA.

The art behind it is called architecture. Not putting down engineering, but it's science, not art. And while it obviously has an element of creativity, it's not 100% creativity driven like art. And in no moment I brought up Picasso, I'm talking about a historical perspective here. To this day, nearly universal standards of beauty are footed in European creations. Roman and Greek architecture, German music, English plays... And in OP's example French and Iberian cuisine are considered the pinnacle of gastronomy.
Asians are better at following instructions(i.e. math - most of it at least), while Europeans are better at creating something new(all the above examples). The chinese(the "original" ones, not the mongol/manchu rape babies of today) discovered gunpowder, but used it to propel arrows, make bombs etc. Europeans created guns and modern warfare technology in general.

Japanese value inefficiency in many things.

Architecture is a dying profession though. Architecture Engineers are replacing them. Architectures lack any understanding of physics or math outside of a few basica trig identities. It should be no surprised that an award that was started in France and is run by Frenchmen would be inherently biased towards French cuisine. I don't even blame them, really. It makes sense. It's like asking the IRS to audit itself.

Michelin stars dont mean shit these days. It doesn't indicate quality or anything, most of the ratings are biased as fuck and food is often not judged but instead adjudicators look at overpriced wines and history on some irrelevant stuff instead. Also this system is corrupt as fuck.
