Pekorin Mousse Cake

(yields one 15cm/6" cake)
>Strawberry yogurt mousse
20 ladyfinger biscuits
2 tbsp. water
5g powdered gelatin
120g fresh strawberries
100g plain yogurt
40g caster sugar
2 tsp. lemon juice
50mL fresh cream
>Decoration
150mL fresh cream
1 tbsp. caster sugar
red food colouring
Chocolate pens (pink, blue & white)
Strawberry-chocolate candies* (pink)
1 or 2 fresh strawberries
[* They're probably talking about strawberry-flavoured white chocolate balls, the Morinaga chocoballs are pretty popular there but harder to come by elsewhere. Since you just need something ball-like for Pekorin's hair tie, you could use pink M&M's or pink milkies, if those are easier to find. morinaga.co.jp
[And if you don't know what ladyfingers are, just google it. It might have a totally different name where you come from.]
>Preparation
1. Let's make the strawberry yogurt mousse. Start cutting the ladyfingers into 5cm/2" pieces.
[Ichika: When you're cutting the biscuits, pulling the knife back in draw cuts (instead of trying to chop them) to keep them from crumbling.]
2. Line the cake pan (ideally with a removable bottom) with the biscuits, starting by standing up along the sides, then covering the bottom.
3. In a heat-proof container, add the gelatin to the water to soak. Set aside.
4. Blend the strawberries, yogurt, sugar and lemon juice in a mixer/blender.
[Ichika: If you don't have a mixer, mix the yogurt, sugar and lemon juice in a bowl. Then fork the strawberries separately until well mashed and add it to the other ingredients.]
5. Heat the gelatin from #3 in the microwave or in a hot water bath to melt it, then add 2 tbsp of the blend from #4 and mix. Return this mixture to the larger bowl of blend, set in an ice water bath, and stir until it thickens.

6. In a separate bowl, take the fresh cream , set in a bath of ice water, and beat until stiff peaks form.
7. Incorporate the whipped cream into #5 with a whisk, then pour into your biscuit-lined cake pan. Refridgerate for at least 3 hours.
8. Once properly cooled, remove the cake from the tin and transfer to a serving plate.
9. In a new bowl, mix the cream and sugar , set in an ice water bath, and beat until stiff peaks form.
10. Divide the whipped cream in half, and add red food colouring to one half a tiny bit at a time until you get a faint pink colour.
[Ichika: If you add too much food colouring, the pink will be too dark! Add it carefully and gradually if you want the right Pekorin-coloured pink!]
11. Pack a piping bag fitted with a round tip with the pink whipped cream and roughly squeeze out a round Pekorin-head-shape onto your mousse cake.
12. Use a moistened spoon to smooth out the pink whipped cream and shape it into Pekorin's face.
13. Take the leftover white whipped cream from #10, and spoon it out to make Pekorin's fluffy ears.
14. Warm up the chocolate pens in a warm water bath. Use the pink for Pekorin's nose, mouth and cheeks; use the blue for the eyes; and, once the eyes have set, the white for pupils and glints.
[Ichika: You can also draw (or trace) Pekorin's face onto parchment paper to use as a guide.]
15. Slice a strawberry or two thinly, then place them below the face to make a bib.
16. Pack a piping bag fitted with a star tip with the remaining white whipped cream and draw stars (beside Pekorin's bib) and hair.
17. Place the pink candies at the base of Pekorin's hair to make a hair tie.
