I'm quite ignorant when it comes to history, so my opinion would probably hold little value, but I can tell that it's not your typical Oriental mysterious story, but features quite down-to-earth political history. You also have notChinese, notEuropeans etc. in the show too, it's not just about cute Ottomans doing cute things.

This show actually made me feel so bad about my ignorance that I started reading Ottoman history.

Cannons were known and existed since the early 14th century. Arquebuses became common in the 16th century. They were literally miniaturized cannons and were often called hand cannons. The early variants were unwieldy and not really useful for this reason.
Judging from the gun seen in the anime, I date it as an early 16th century arquebus.
Turks were pioneers of using artillery, but not so much of muskets. That's why their usage doesn't make sense in the anime and you can't properly date it either.

Maybe not including artillery makes the battles more epic as far as story-telling goes. For example, if they had cannons in the show, then the Empire would rain cannonballs on the walls of Phoenicia and we wouldn't see Glalat and Lele pulling crazy stunts.

If they really tried they could have shat out a few improvised siege cannons from tree trunks. But the technology is really non-linear and fucked in the show.
Honestly, seeing the ship designs I expected the empire to have some kind of artillery on their ships, even as experimentally above the deck. Their solution for taking Phoenicia was kind of dumb and overcomplicated at the same time. I would have just used divers at a calm night. They could have easily swam ashore and hide. It would have certainly been less suicidal and detectable than their chosen solution.
