When they fight are embeded in hundred-millions of ki units, Roshi destroys the fucking moon back in DB, and Goku could tank attacks like that.
They are just made of flesh, and baby Goku had a power of 2 when he fall in the Grand Canyon.

x20 is the max Kaioken level, even if Goku could handle more that is the best the technique can do.

Immortality is pointless for most strong Dragon Ball characters. Even if you can't die, you still can't defeat your opponent if you are not strong enough. There's also many sealing techniques in Dragon Ball that could be used against totally immortal people. Immortality would eliminate the zenkai boosts that Goku constantly gets. Earth Shenron is only as strong as Dende so immortality under Shenron's power would logically only be as strong as Dende's power could allow it to be. Also consider that many Dragon Ball characters are hundreds of years old.

So in Dragon Ball, humans can be hundreds of years old but how is this possible? Dragon Ball is inspired by Chinese martial arts where the idea of a person being immortal from self improvement through martial arts exists. Of course, this is just fiction but in a fictional story, this is true. Martial arts masters in Dragon Ball never die of old age as long as they keep training to improve themselves. Goku will never age (he's a Saiyan) and will never die of old age as long as he maintains his training. That's just how it works in Dragon Ball and this is also why Goku throws in years in the Time Chamber without a second thought.

........there's probably an interesting story to be made from Goku's time on Yardrat. He was there for an entire year in a setting completely alien to what we usually see in DB. And it all happened off-screen.
