What I can't understand is how people can defend a mangaka they consider to be shit just for the possibility of that person making two fictitious people end up together. How is a pairing so important for those people?

I don't know how people can be so invested in romantic pairings in a series where the mangaka clearly doesn't care about romance and puts little to no effort into it. Shit is Dragon Ball tier, unsurprising when so many shounen mangaka suck his ballsack. There's the Goku x Bulma (platonic relationship shiptards twist as romantic for shallow, normally self-interested reasons) and the Goku x Chi-Chi (one-sided crush in love with person as romantic as a stump so there's no real romantic development, just the writer creating ground to pair off characters).
There are shonen manga, even battle shonen manga, which have decent romance. But those don't attract the most flies and don't allow them the freedom to indulge in their fantasies long enough for the mangaka to either semi-validate them or crush them entirely.
Kubo cared though.

Not really since IR was the most popular pairing of Bleach while Narusaku/Naruhina were both popular in Naruto so it was 50/50 in terms of what shippers wanted. If you're talking Sup Forums solely then IR and NH and Naruto was more popular so it generated more uproar.
Also go to the spoiler threads becauee you're wrong. Plenty of non-shippers were happy to see IRfaga get BTFO because of their autism all these years.

But, the next day, when he recounts the previous day's confessions to the girl, she only blushes and runs away in absolute shock and disbelief. After some investigation, he finds out that the cowtits girl he called is not the same girl he fell in love with. In fact, she doesn't exist in the living world at all. She is the girl's dubbed anime counterpart, who has fallen in love with the MC's own AU self, who too is blissfully unaware of her crush.
Hijinks ensue as the two strike up a deal to give each other their darkest, most private secrets in order to equip the other with the weapons they need to conquer The Heart of their other selves. While the two chase their respective loved ones, DRAMA ensues as they begin to fall in love with each other instead and question the NATURE of ICHIRUKI BUTTHURT.

I was a big bleach fan and I didn't read the last arc bc of the negative response. now that it's finished and the dust settled down, is it worth reading?

Bleach always had a somewhat depressing atmosphere and a negative aura. could it be that the IH - ending was chosen just to amplify that? let's not forget that rukia is a shinigami. there's no way ichigo could've married her. so because of that ichigo and rukia were forced to marry someone out of their world even though they did love each other. isn't that plausible? would also fit into this depressing setting of bleach.

It's not worse than the arrancar arc, it has its peaks and low points, and the mandatory flashback arc. Expect lots of asspullish power up.

Kubo stated on his Twitter that he drew the ending (the epilogue) the way he wanted since chapter one. In the postscript of the renji-rukia wedding novel Kubo reiterated this by stating he drew the final chapter the way he wanted since the beginning by having Ichigo's and Rukia's children meet.

No chance. Ichiruki was the more popular pairing, it goes against logic that the editors would want to force the less popular pairings. Also his editors are grown ass Japanese men, not 15 year old school kids or sad 30 year old dumblr landwhales who would be petty enough to force something like pairings. Kubo had a really good relationship with his later editors as stated in the author notes of some of the later volumes of bleach.

It is kinda depressing when you think about the fact that Ichigo only sees Orihime as nothing but an expy for his mom.
