Avoid neo-isekai, its focus is on wish fulfillment using cardboard cutouts instead of characters. The old isekai stories relied on character interaction rather than the author stroking his own dick, so they are almost universally far better.
If you really want the dick stroking kind of isekai though, I think Isekai Tensei Soudouki (manga version) is the best out of them all. If you specifically want a light novel, Mushoku Tensei might be the least atrocious.
Because the authors have no fucking idea for the plot. What they have is a premise ("so, uh, the guy gets turned into a sword or a bear or a vending machine and it's a fantasy MMORPG world with levels and skills and stuff") and nothing else. Which is why you get the same archetypes of characters, the same adventures, the same cliches and the same boredom.
Doesn't seem like a parody really, it plays itself quite straight - overpowered MC, (almost) everyone sucking his cock and so on. What it does is having a slightly better character interaction, mostly revolving around the banter between the frog and the MC, and never being too serious about anything, which is enough to feel that it's better than the rest.
The latest chapter is about the various races writing blogs, it's not playing it straight at all.

Personally I really enjoyed Mushoku Tensei. The early stuff is pretty ehhhh, but I think post-college stuff is goddamn amazing. MC is powerful but everything post the college is waaaay fucking beyond him and he's constantly struggling even with assistance of 2+ people on top of him using his own specially created stuff.
Shame we'll probably never get a continuation.

I will never understand why people enjoy Now and Then Here and There. It's just shit happens and the MC has absolutely no notable characteristics or actual purpose. I mean a Chevy Impala could have been the MC and it wouldn't make a difference it was a series of "AND THEN" with some 3rd grade tier morality monologues and "shock" scenes

I wrote this in another thread, but basically the isekai's that aren't shit revolve around the MC's accepting very early on that they're gonna live in this world from now on. Those stories focus on exploration, world building, and establishing the characters' personalities. These stories are basically regular adventure fantasy, with the whole isekai thing being the jump start and not much more.

Unironically one of the best isekai I've ever read. Doesn't take itself seriously at all. The comedy is much better than Konosuba. It is kind of a strange sex fantasy, with none of the beta protagonist cliches or purityfag pandering shitting it up.
Isekai suck because they always progress too quickly, usually with the MC having an "Advanced; ultra high skill ceiling" setup. Skill is retardedly slated against you, but the MC(thanks to his gaymer skills) works out the cheesiest cheese build.
It'd be more fun if people progressed at a slower pace. Better characterization would be nice too. Stop making anyone who opposes the MC be evil just for the sake of evil or whatever. Look at the OP. The girl's choice could have been played out to be a more realistic, heart wrenching moment then just having her character do a 360 with an evil smile and everything.
Maybe less focus on the RPG elements. Just have human limits be lifted and magic thrown into the mix. Author can write some OOC stats for the characters he like if he can't just demonstrate their capabilities for some reason.
The best isekai is actually a korean ln called Dungeon Defense.

I like The Faraway Paladin. In LOTR terms MC is basically a Second Age-level hero thrust into the tail end of the Third Age, so his power level is pretty far ahead of most people around him, but he's so earnest you can't help but still root for him.
I was enjoying Meikyuu Black Company, but nobody uploads the 7seas releases. It had a fun premise with an MC who wasn't an overpowered cheat machine. He was an asshole in his original life, and he remained an asshole after being isekai'd. Seeing his plans fail to blatant oversights was fun.
