Because Irish immigrants made the holiday what it is in the USA today. Funny thing, St. Patrick wasn't Irish. He was born in Roman Britain and his true name was Maewyn. He was an escaped slave as well.

Nobody explains why but I think it's signalling maybe because of the anti Irish sentiment the US had in its early years
