Boy choice: Fall/Winter Uniform from Persona 4.
My favorite male uniform, because I love that high collar and the checkered/stitched grey.

Girl choice: Koi to Senkyo to Chocolate
The cut looks classy and the olive green with the white gives me good vibes.
The main reason for both choices, is that both of these are customized by their wearers by adding things to the uniform, swapping pieces out or by simply wearing it unconventionally. A plain uniform as a base is great for making everyone look unified, but the ability to customize it easily gives the wearers better chances to express their characters and quirks.
Another example would be Little Busters, but I think that base uniform is a little too boring.
