Seeing the evolution of Kotomine and Kiritsugu and how they contrasts with their own futures and how they are seen by the next generation is super valuable, especially when Kerry is contrasted with Shirou.
Not to mention that Waver ended up being a great addition to the larger universe, since he and Kayneth helped us explore the Clock Tower and mage society in greater depth, the stories of Kariya and Tokiomi gave us valuable insight into how and why Rin and Sakura became who they eventually become, Lancelot and Iskader ended up being an important puzzle pieces for Saber's character development and helping flesh out her desperation in the next story, Irisviel added a lot to Illya's character, Gilles opened the door for Jeanne to finally appear in later works.
Zero made a ton out of being a prequel. The 3rd War could easily do the same because its even more of a blank slate.

Short answer: read the VN
Long answer: if you feel it'd take a lot of time to read the VN, I recommend watching Fate/Unlimited Blade Works first since it adapts well one of the three routes of Fate/Stay Night. Consider it one of the 3 possible futures that can happen after zero.
Once you do that, I recommend reading/watching Apocrypha because it is still pretty fun. and should you want to go on after that, reading Strange Fake and Tsukihime, though Strage Fake is still in progress and Tsukihime is a parallel universe to Fate focusing on vampires

Basically, due to the sheer amount of characters, whenever one appear or acts, it doesn't take long for it to go back in time some hours or a day, so while it is technically progressing through these four volumes, most of the time a character aside the first 6 masters acted were in some sort of flashback for what they were doing during their summon. There are also a lot of fights and they take little time of the day to happen.
We are little after 10PM at the third night right now in story time and there were a few things purposefully skipped that will be explained later, so it's difficult to imagine it progressing much next volume

I'm constantly in awe at how, the instant someone says they watched an entry of Fate, the flock of Type Lunatics come crawling out of the woodwork chanting "filthy secondary" and "read the VN" as though it's a blasphemy that anyone would dare think to enjoy their precious franchise in a manner other than the prescribed "proper" manner.
Maybe, perhaps just maybe, some people have no interest in a porno game and just want to talk about a cool action anime without the baggage of a rabid VN fanbase and their overburdened and bloated source material.
Anyway OP, watch Unlimited Blade Works next. It's not as good as Zero, but it's a fun enough continuation of what Zero started and despite being inferior to Zero, it isn't a bad series by any means.

Half of the people saying that are rabid Type Lunatics outraged that a Fate entry would dare change what was already established in the mainline universe. The half who aren't do have their legitimate grievances, but if you're able to ignore Sieg and can find at least one character to root for, Apocrypha is a blast.
There's a series based on the Fate/Extra PSP game that's currently airing, so once you've finished UBW and Apocrypha, you can watch that while you wait for the Heaven's Feel movies to be finished. I'm personally not the biggest fan of Extra as I don't really like any of the characters and have little interest in the setting, but maybe you'll find it more enjoyable than I do.
Last on the Fate watch list is the original Fate anime by DEEN. It's lauded as terrible for a reason, but if you can stomach it makes a great time capsule for its era, and if UBW leaves you disliking Shirou, it's worth it just to watch Shirou get the shit beat out of him all over again.
