Oolong tries to wish away Vegeta and Nappa, but Shenron can't since their powerlevel exceeds Kami's. There was no point in time in which they needed to/could've wished away the villain. Especially since all of the villains that were weaker than Kami were also hunting for the dragonballs.

Things would be very easy for the human Z fighterz if they wished for immortality.

Even with immortality you could be subdued. Frieza could just fly you out into space, leaving you stranded or just blow up the planet. Also we've never seen someone use the regular dragon balls for immortality in canon material. Who knows if it would work

They couldn't have wishes to kill/teleport anyone stronger than them.
They COULD, however, have asked Shenron to:
