It was such a huge cashcow that Type-Moon probably wouldn't have even bothered making Fate if they knew that it was going to keep raking in the cash for the next decade. Notice that the Fate spin-offs didn't start getting churned out until right before the Melty Blood license expired.

It's been obvious that he's sick of Fate since the TM April fools 2013 event. Takeuchi is basically running the business now and his waifu Saber makes the both of them lodsofemone so Nasu is probably hesitant to throw away such an effective cash cow no matter how he feels about it.
If you look at things like the F/GO CCC Event, or really any of the stuff in the last few chapters, you can see that he does have a lot of shit that he still wants to put out - characters he wants to create happy endings for, giant set-pieces he wants to put on a screen, and so forth.
I do agree that he's getting ready to retire, though. Probably after F/GO pt2, at the absolute latest. There was a pretty good chunk of the last chapters to F/GO pt1 dedicated to the idea of passing on a legacy, and leaving something behind for the younger folks. Nasu sees himself as someone who made something, but he wants other people to start commandeering that in the future.

The franchise became big enough that TM could afford to hire writers beyond its founders, who treat all their work like a passion project. However, they couldn't afford good writers, but it doesn't matter because the series is popular enough to coast on its own success.
So we just get more things like Extra, and like Aporcrypha, and like GO's whole dumpster fire. And that will be fate from now on and forever, because it's printing fucking money.
That's the long and short of it. TM in general was what it was because it was the brainchild of a small group of creatives who had passion for what they were doing. It wasn't great, but it certainly had an appeal and found an audience. That has been left behind, and those that were in it for that old appeal probably won't find it any more.
