It's apparent that less attention was given to composition and more to instrumentation and sound, which may achieve a certain atmospheric effect but sacrifices any kind of enduring significance or longevity.
The quality is rather scattershot, and what few good pieces exist are entirely derivative, resting on the laurels of previous games' musical achievements. Kataoka was clearly a little in over her head here, and was unable to develop themes that distinguished themselves on their own merits. This is the mark of a good soundtrack, and it's simply lacking here.
That's not to say there are no good tracks or that the score is a completely lost cause, but the highlights are few and far between. Put another way: have some fucking standards, dude. Don't just meekly accept whatever you get.

The music chooses to be atmospheric rather than strictly melodic and blunt. It's appreciable in a different light. Get some taste.
That sounds like more of an appeal to popularity than anything. Plus, late 19th/early 20th century music is certainly not "universally" praised, nor was the contemporaneous response one of unanimous derision.
You can like atmospheric music, you can like melodic music, or you can like both (I happen to lean toward the melodic but make plenty of allowances). But just because the score models itself on atmospheric music doesn't vindicate it of its shortcomings, namely a general blandness and lack of inspiration.
I would cite Joe Hisaishi as an example of a composer with masterful command over both the melodic and the "impressionistic" as you call it. Leading up to release plenty of comparisons were made between BotW's score and Spirited Away's, but that seems to me like selling Spirited Away's a bit short.
Once again, don't take this as a complete dismissal of BotW's score. There are a few good things to take away from it. Most of the tracks are letdowns though.

Sell ore, although they'll be required for armor upgrades late game. I'd save your monster parts for Fang and Bone. In Rito Village, you can exchange Baked Apples for a huge net worth (100 for 1200 rupees, I forgot the exchange rate for 1, 30, and 50). Lurelin Village to the southeast has a gambling minigame you can savescum. Near Hebra Tower is Pondo's Lodge, which has a snowbowling minigame.

I vastly prefer the OoT formula due to really enjoying unlocking portions of the land and items depending on what subweapons I got with enjoyable puzzle-filled dungeons and combat rooms. The BotW formula is also great, especially with how they give you freedom to solve things your own way, but if they're going to continue with it I'd just like them to shrink things down regarding the world since it felt like it was far too big at times and it just got tiring to wander around it after about 60ish hours, especially in regards to the snowy mountains that took ages to climb unless you had Revali's Gale. They would also have to make the dungeons better than the disappointment they were in BotW, you just sort of dicked around for five minutes and you got every chest with the camel being the only one out of the three I've done so far having you think about how to get around. They're honestly just bigger Shrines.
Farm the dragons for their horns, take a picture of a rare ore deposit (The yellowish ones) and point your sensor to it, or kill Talus'. You can also hunt animals in the mountainous regions and make meat skewers which sell for like 240-400.

Go to a loading screen like fast travel or saving then loading, the number under the Spirit Orbs is shrines. If you're not at like110+ you shouldn't look at a guide for them, it's relatively easy to spot you, you probably haven't been to certain areas yet.

thinking of the future, I think the nonlinear formula works the best for Zelda. It takes it back to its roots, and I like that it takes the player's sense of wonder and cognitive thinking to solve puzzles or figure stuff out about the world. OoT's formula wasn't bad, but it removes alot of the mystery behind the gameplay formula and the wonder, too.
