Without any real knowledge on molecular biology, I would suppose the three-dimensional structure of the protein is such that repulsive dipole forces prevent that from happening. Or something to that effect, but either way it can fold in that specific way only. It has had several billion years to evolve maximum reliability after all.

When it comes to biological sciences and chemistry schools feed you very simplistic and/or dumbed down concepts. Once you go to higher learning they start feeding you actual answers. The human body is pretty rad tbch. Eating a hamburger launches a series of reactions and mechanism to break down carbs and fat, and how they interlink is so neat.
